Salmon rice frittata by Wai Sum‎


Ingredients
Garlic
Olive oil
Salmon, steam and flake
Half bowl of cooked rice
Homemade tomato sauce
Broccoli, chopped
2 eggs
Grated cheddar cheese


1. In a bowl, beat 2 eggs and mix with grated cheddar cheese.
2. Sauté garlic with olive oil till fragrant
3. Add in broccoli, rice, salmon and stir. Follow by homemade tomato sauce. Continue to stir till mix.
4. Transfer the mixed rice into muffin mould, fill only half or 80% full and pour mixture egg overtop. Gently stir with fork.
5. Sprinkle some cheddar cheese on top (optional)
6. Baked 150, 20mins
