Crispy Salmon Croquettes with Cheese by Chan Kar Mun‎


1 Potato, cooked and mashed
1 portion of salmon, steamed and mashed
1 slice of Cheese slice, teared into smaller pieces.
Philadelphia cream cheese
Pepper and salt to taste
Potato starch/ corn flour for coating
1 Egg, beaten
Breadcrumbs
Oil for frying

Method:

Mix mashed potato, salmon and Cheese slice together.
Add pepper and salt to taste.
Shape a small base of the above salmon mixture, pat it firmly, put in some philadelphia cream cheese in the middle. Cover it with the salmon mixture.
shape it into the heart shape, be careful that the philadelphia cream cheese is not exposed while you are shaping it. Make sure that the patty is firmly shaped, if not it will flake off while pan frying it
Dust with flour shaking excess. Dip into beaten egg.
Coat with breadcrumbs.
Pan fry till golden brown.
Drain and serve immediately.
The heat should be medium-low at the beginning and then turned to high at the end to 'force' out the oil and make the croquette golden and crispy

I think the key is to let it fry for around 2 mins on one side before flipping over to the other side for 2mins depending on how hot is your oil? Be patient before you flip over, don't keep on peeping
