Tofu Cheese cake with Strawberry Balsamic Vinegar by Michael Lee

Michael's secret recipe for the strawberry balsamic vinegar topping:

INGREDIENTS:
2 Tbsp lemon juice, 40g honey, 50g sugar, 6g gelatin leaves, 200g strawberry puree, 1 tsp of balsamic vinegar

STEPS :
1. Soften gelatin leaves with tap water
2. Warm strawberry puree under small fire
3. Add honey, sugar and balsamic vinegar

4. Mix well and add softened gelatin leaves.
5. Once gelatin has mixed in, turn off fire and add lemon juice and stir.
6. Cool down a little before you pour on top of your cheesecake.
7. Let the topping set for 30min in fridge before unmoulding.
