Fried Pomfrets in Chilli Garlic Sweet & Sour Sauce by Karen Ng




2 Pomfrets
4-5 fresh red chillies
1 whole clove of garlic
1 tsp of corn flour
Half cup of water
1 tsp of oyster sauce
1 tsp of rice vinegar
1 tsp of sugar
1 tsp of Chinese wine
5 tbsps of tomato sauce
Few drops of sesame oil

(1) Put both chillies & garlic into a blender & blend or chop finely. Set aside.
(2) In a bowl, mix corn flour with water. Add all other ingredients & stir well.
(3) Clean fish & rub with some salt. Fry till golden brown & cooked. Place onto dish.
(4) Heat up some oil & add blended chillies & garlic. Sauté till fragrant.
(5) Add mixed ingredients from the bowl & stir till boiled. May add some hot water if too dry.
(6) Pour sauce over fried fish. Enjoy.....
