Ingredients
500gm self raising flour
500gm butter
280gm fine sugar
180gm milk
60gm icing sugar
6 eggs
20gm lemon or lime juice
Zest from 2 lemons or 4 limes
2 tbsp grand marnier or orange liquor
2 tsp vanilla essence
Method
- Put juice into milk and let it rest (makes buttermilk).
- Beat sugar and butter till light and fluffy.
- Add eggs one at a time till combined.
- Add essence and zest.
- Fold in half of flour. Add in half milk mixture and mix.
- Add last 1/4 flour and mix.
- Put into three 4x8 inch loaf pans
- Bake at 170 degrees for 45 mins
