Assam Red Snapper with homemade rempah by Linda Lau


Assam rempah recipe:-
1) 2 fresh red chilli & 2 small chilli padi
2) 1/2 clove of garlic
3) 1/2 onion
4) 1/2 cm balachan
5) 1 lemongrass ( white part only)
Blend 1-5 till fine

Red snapper, 300 gm
Ladyfinger 2
Tomato 1( slice )
Lemongrass 1 ( cut into 2-3 cm long )
Assam water

Methods
Steam the fish & ladyfinger for 10 mins at boiling point

Put abit of oil in the wok, add rempah & fried till fragrant...
Add tomato, lemongrass, assam water & water...& sugar ( adjust assam water & water to yr taste )
Fried for awhile... Done & pour onto the fish...
