Or Nee / Taro pumpkin paste by Evelyn Lim


Ingredients
500g taro (slice thinly or cut in cube)
300g pumpkin (cut into cube)
500ml water boil with one pc rock sugar (pian tang)
Gingko (each person only can have 7-10, so u have to count your self)
150ml coconut milk ( I bot vacuum fresh type from market)
4 tbsp shallots oil

Directions
1) steam taro n pumpkin for 15 minutes, use fork to mash while hot n put aside
2) heat wok put in 3 tbsp shallots oil stir fry taro paste over medium low fire. Stir continuously until taro n oil are well combined. (1 tbsp is to see if oil not enuf then to add in it).
3) reduce heat gradually add in rock sugar water n keep stirring till taro paste becomes smooth and paste -like consistency.
4) add coconut milk stir till well combined.
5) serve with pumpkin n gingko.
Note :
Sweetness is based on your like, I just used one pc pian tang boiled in 500ml water n only use 300ml
Add few pcs pandan leaf in 500ml water with the pian tang n gingko.
