Cheese Muffins by Betty J Woo


This is Samantha Ng's shared recipe:

Ingredient A
1) 150g butter (I use unsalted butter)
2) 8 slices of Cheddar Cheese
3) 30ml milk (I use full cream milk)

Ingredient B
1) 2 eggs
2) 125ml milk (I use full cream milk)

Ingredient C
1) 225g self raising flour (if u use plain flour, I presume baking powder is required BUT I dunno how much to add)
2) 175g caster sugar (I use 155g only coz dun want mom to eat too sweet)

Steps:-
1) melt all listed within ingredient A over low heat. Put aside to cool
2) mix all listed with ingredient B
3) Pour step (2) into (1) n mix well, make sure no clumps
4) mix ingredient C into step (3) (I did with manual whisk, mixed well till all combined)
5) Spoon batter into muffin cups till 2/3 full (I spoon some batter n added choc chips, then fill the cups to 2/3 full)

AF - if using AF, 160degrees for 13 mins (I did not use AF but assume will need to preheat AF for a few mins before baking)

Oven - I use 170 degrees for abt 25 mins, I did preheat my oven. Pls note different ovens have different temperament, so please adjust accordingly

According to Samantha, can add more cheese cubes or even ham inside.
