Spicy Black Bean Paste Lala / 豉汁炒啦啦 by Carina Khong


Sauces

Spicy black bean sauce (i use Lee Kim Kee) 2 tbsp
Soya Bean paste 2tsp
Water 1 cup
Cooking wine 1 tbsp
Corn flour 2tsp
Sugar 2tsp

Fresh clams 0.5kg
Cooking oil 1tbsp
Garlic 3 cloves chopped
Ginger 3 slices
Red onion 1 medium
Red chilli 1 big (I used 1 chilli padi)
Spring onion n parsley (a handful)

Steps :
1) Heat cooking oil in pan, add in ginger n fry for a while or when it becomes brown
2) Add chopped garlic n fry till light brown
3) Add red onions n fry for 1 min
4) Add black bean paste n fry till fragrant, add soya bean paste n chilli
5) Add water n bring to a boil
6) Add clams, cover n simmer till the shells are all open (ard 4-5mins depending on ur stove)
7) Add cooking wine ard the frying pan n stir the ingredients
8) Add spring onion n parsley
9) Serve
