Healthy Platter of Steamed Baby Squid, Frozen Tilapia Fish by Jess Chen



Ingredients for stuffing:
-Minced pork
-Big red chilli, diced finely...
-Parsley, chopped finely
-Spring onion, chopped finely
-Lime leaves, roll up and cut finely with scissors
-Fish sauce
-Sesame oil
-White pepper
-Soy sauce


Ingredients for sauce:
-Steaming liquid from steaming fish and squid
-1/2 cup of water
-2 cloves of minced garlic
-1 big red chilli, chopped finely
-3 Lime leaves
-1 stem of lemongrass
-A splash of white vinegar
-Fish sauce to taste
-1 teaspoon of sugar
-6 cherry tomatoes for the sour taste

Method for sauce:
1) Heat up oil and fry garlic, chilli, lime leaves and lemongrass till fragrant.
2) Add steaming liquid, water, vinegar, fish sauce, sugar and cherry tomatoes. Cook till tomatoes soften.
3) Use a fork and press the cherry tomatoes to release the sour taste.
4) Serve seafood with sauce and squeeze a lime over seafood before eating.
**Use a fork and score the squid so that the pork gets cooked through before steaming it for 15min or until cooked.
